Vegan Pick of the Week

Quick Zucchini Pasta 

Ingredients: 

  • Zucchini (Regular or already spiralized)
  • Marinara or Tomato Basil Sauce (Homemade or Store bought) 
  • Mushrooms (of choice)
  • Yellow Squash
  • Tofu (Sprouted Organic) 
  • Bell Peppers (Preference) 
  • Kale or Spinach (optional) 
  • Garlic (Chopped or powder)
  • Red Pepper Flakes (Heat tolerance dependent)  

Instructions: 

  1. Heat olive oil in a skillet pan on medium-high heat. Add in mushrooms, tofu, bell peppers, squash. Add in chopped garlic and red pepper flakes for additional flavor. Cook for 3-4 minutes. 
  2. Add kale or spinach to the pan, add salt and pepper, and season to taste. Cook an addition 2-3 minutes. Put ingredients that are mixed aside and let cool. 
  3. In the same pan, put in the spiralized zucchini and saute for 1-2 minutes. Add a little olive oil if the pan gets to dry. 
  4. In a separate stove, take a saucepan and pour your sauce into it, and add the ingredients that were put aside, allow to cook for 4-5 minutes to a light simmer. 
  5. Remove the Zucchini noodles, pour the sauce of over your noodles, allow to cool a bit, and enjoy.
